Cutting sturgeon with Evgeniy Pleshakov

In my restaurant, I not only treat guests to seafood, but also tell them about the incredible inhabitants of the underwater world. For example, we held a show together with chef Evgeny Pleshakov: the hero was a huge sturgeon full of black caviar!
Kaspiyka watched the process with interest; the guests tried freshly salted black caviar, and later enjoyed exquisite dishes from the special menu: tartare and guacamole with sturgeon caviar, kutabs with sturgeon, and grilled sturgeon steaks.
